IMO, this is mainly because of the game design. All game loops are simple but the things you need from this loops are excessive as if Frontier goal is to make you bored from grind and made you quit when you reach some self imposed objective.
My solution for this is to not focus on single activity but try them all and rotate them as I see fit.

a good ship without navy or imperial rank is a type 9 heavy. right fitted there is nearly 700t cargo space and you can put a fighter bay into it.
pick a good trading material and route and lets go.. takes a while but the profits getting bigger and bigger.. and watch out for pirates

EpisparhMining is not so boring, especially core or sub-surface one. What makes it boring is the repetitive nature of a grind countless hours. But then anything that you repeat is boring. Robigo, bounty hunting, mission stacking, trade runs, whatever you name for credit making.

This is good advice. I'd even go so far as to optimize mining for rate rather than efficiency. For example, I reduced my Mining Cutter's storage to 256 tons in favour of more collector limpets. I'd rather mine half the ore in a third of the time than grind an asteroid belt for a full 512 t duration.

Yeah, but you have to refit your ship to change the activity (or even buy another ship and outfit it) if you want to do it on 'acceptable' level of efficiency.
It may be too expensive for 'fresh' (new or restarted) players who barely can afford even one ship.

Yeah, and I was doing station rescue missions with 26 pax cap. And 9k ly trip too. Without additional fuel tanks, only with 8t built-in one, as I was too noob those days.

I did use extra fuel tanks on my first trip, and they slowed me down!

It could carry 10 units of LTD or Painite (6 in cargo, 4 in refinery). Made almost 10 million per run, twenty times the Courier's rebuy. But then laser mining was nerfed and combat was buffed, so I needed the third hardpoint for something more offensive...

Today I'd rather reduce the default fuel capacity of an exploration ship, because even around Beagle Point where star density is very low, almost all the stars are scoopable!
And I would equip a lightweight plasma slug railgun, so I could quickly jettison fuel for some extra range.

With the Cobra you would need to choose between core mining or conventional laser mining and equip modules accordingly. As you say, the Python is a far better all-round mining ship and will do both easily in one build, but at a far higher cost to a new Cmdr.
I disagree. You need seismic charge launcher and abrasion blaster for cores, mining laser for laser mining and sub surface displacement missile for sub surface deposits. You can fit all this in cobra but you will need to manage power and disable some stuff if you do not use them.
Fair point, you are right it can be done.
it’s just that I prefer to mount at least 2 mining lasers for conventional mining, one is a bit slow for me. With four hard points the Cobra would only have a single maximum C2 laser on a multi-purpose build. So I prefer to swap modules as required. Multiple lasers can make Painite mining a lot quicker and thus more profitable.
