Windows 10 and 11 both let you decide when to update, they just don't let you decide not to (with the exception of Win10 LTS).

I'm pretty well aware regarding 10. I just miss where you could:
A: cherry-pick which updates you wanted
B: Tell it to download whenever, but not install until you said so.
