SonofMacPhistoGlad you asked, Markus! It's insanely fun to shoot up things. That said, you could absolutely go an entire career without ever killing anyone, NPC or otherwise (though accidents do happen, just ask any small ship that's "met" a Type-9 boosting out of the mail slot).
I've built my Asp Explorer especially for getting away and giving my pursuer things to think about. There's been more than a few impressive ships to get away from me (Imperial Clippers are particularly good for getting away in normal space... the need for speed, baby).
Also, Archon Delaine has lasers that are particularly good against shields, but do no hull damage. So possibilities there, yah know?
Friend of mine has an engineered Eagle he calls "Troll-Eagle". It goes over 700 and all he does is pull people out of hyperspace, fly away and wait for them in hyperspace to pop up again only to repeat this process. Said he's got a lot of fun doing that.

Just be aware you may need to install a few fonts, but they should be easy enough to find through Google. I can't remember which ones.
