Vegetarian Quichestill in draft!
Make filling with soy cream (it's like cow milk whipped cream I think? just more liquid-y) and chickpea flour, so it hardens after baking..
The crust is a mix of 250grams flour (rice flour The recipe is meant for wheat flour (which my body violently rejects).. and getting the mix just right to where it wasn't mush or clumped too much was tricky, because gluten usually helps out a lot there. If you've made good moldable cookie dough before. That's the consistency I aimed for.), a cup of water and 150grams margarine. You can add more or less margarine, depending on how you like your dough. Roll it out as a circle and drape it over a baking form, that was covered in some margarine and flour before, to make it easier to pull the quiche out of the form later.
Put that into your fridge for 30 minutes.
The next step is to prepare the vegetables that you want to use for the quiche. I like to cut them into bite-sized portions and then I'll pre-cook them in a pan so they're softer. Place them on the dough inside the baking form.
Pour a mix of one cup chickpea flour mixed with 1 cup of water and 200ml soy cream over it, (add spices, if you want to.. The cream does taste a bit odd without any.) and place the whole thing in an oven. Bake the quiche for 30 minutes at 175°C (convection) or 200°C (top and bottom heat). I'm not sure if those terms are correct, since I've had to look them up. When in doubt, just bake it until it's solid. Test it with a chopstick or a fork or something. If you can make a hole into it without dough sticking to your thing, it's probably done. ????
Oh I forgot that you'll also need to add one cup of water to the filling mix. And one cup is about 150ml for that recipe.
note not enough dough for the sides, and the ratios were wonky, so made 2 doughs by feel more or less.
If you can roll the dough out into a circle and then drape it over a form, that makes things a lot easier.. I couldn't with this flour.
You want to form a bowl, inside the cooking tray, that will hold the goo later.
